Characterization of a New Powdered, Milk-Based Medicinal Plant (Alcea rosea) Drink Product

Alcea rosea, known as hollyhock, is an ornamental dicot flower in the Malvaceae family, and it has been used for different purposes, ranging from traditional medicine to food applications, through use of its leaves, roots, seeds. The hollyhock flowers possess several properties, including a diuretic, cooling, demulcent, emollient, febrifuge, astringent effects. Hollyhock were commonly included formulation hypoglycemic or hypolipidemic treatments. Along with medicine, also considered valuable ingredient some preparations; however, processing into new product not studied. Accordingly, this study aimed evaluate production product, milk-based (Alcea rosea) powder, powder characterization via particle size, water activity, density, flowability, etc., addition determination chemical composition (with 5.73% ash 29.12% protein). In paper, we report application spray-dried extract produce ready-to-drink medicinal plant sustainability.
